Recipe Thursday

Hello everyone!! Wow, is it miserable here today!! I had to work & drove home in the POURING rain! At least it's not snow.....yet. My thermometer reads about 33 degrees so it could turn to snow/ice any minute. There is, in fact, an ice advisory to the north of us....it could get really dangerous out there!!

Well I don't have a card today....still wading through all that new rubber from High Hopes...but I do have another easy peasy recipe!! And it's a good one......banana bread!!!! Mmmmm......

BANANA BREAD

1/2 cup butter
1 cup sugar
2 eggs
1 tsp vanilla extract
1-1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
2 medium bananas, mashed

Preheat oven to 350 degrees. Grease a 9"x5" loaf pan. In a large bowl, stir together the melted butter & sugar. Add the eggs & vanilla, mix well. Combine the flour, baking soda & salt, stir into the butter mixture until smooth. Finally, fold in the sour cream & bananas. Spread evenly into the prepared pan. Bake for 60 minutes, or until a toothpick comes out clean. Cool loaf in pan for 10-15 minutes before removing to wire rack to cool completely.


I love this recipe because you can mix everything by hand, no need to drag out the mixer!! A few tips:

**You can substitute yogurt for the sour cream. The first time I made this I didn't have any sour cream, so I used vanilla yogurt......just as yummy!!!

**I use my Pampered Chef loaf pan. It bakes more evenly, & you don't get those yucky crispy corners. That means I get to skip the greasing part. I know not everyone has one of these pans.....but I gotta tell you Pampered Chef stoneware is the BEST!!

**I'm sure you know this, but the riper the bananas, the more flavor. Did you know you can freeze bananas right in their peel? Yep, when mine start to get too brown, I just throw them in the freezer, peel & all!!

** Speaking of the freezer, this bread freezes wonderfully. I love to make mini loaves with this recipe (yep, I have that PC stone, too, lol!) & store some in the freezer. Just wrap it real well in foil & a freezer bag

**Sometimes I like to add milk chocolate chips to the batter to make it Chocolate Chip Banana Bread.....of course that makes it more of a dessert than a snack, lol.....but I score more points with my kids when I do this. In fact, that's what I did this time around......

Hi Michelle! I have a similar recipe and my girls LOVE when I put choc. chips in it! I'll have to try your version b/c mine doesn't have sour cream. Vanilla yogurt really sounds yummy! TFS:)

cream sounds interse!! We all love banana bread and of course the c.c make it so much better!!

I do the same thing with my frozen bananas only I hate peeling them after when they defrost a wee bit, so now I peel them first then tuck them in a ziploc bag and freeze them, works just as well with no yucky half frozen squishy peel to take off:-)

I totally agree with you on the Pampered Chef Stoneware...LOVE it!! I have a few of their pieces and they are fabulous. The small bar pan works awesome for a cookie sheet too or a sheet cake!
